Ingredients:

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 cup milk
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1 pint vanilla ice cream, softened
  • ½ cup chocolate sauce
  • Whipped cream for garnish
  • Chocolate shavings for garnish

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  2. In a large mixing bowl, cream the softened butter and sugar together until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, combine the flour and baking powder. Gradually add to the creamed mixture, alternating with the milk, and mix until just combined.
  5. Divide the batter evenly between the two prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  7. Once the cakes are completely cool, place one layer on a serving platter. Spread the softened vanilla ice cream evenly on top.
  8. Place the second cake layer on top of the ice cream. Freeze for at least 2 hours to set the ice cream.
  9. Before serving, drizzle chocolate sauce over the top and garnish with whipped cream and chocolate shavings.
