Ingredients:

  • 1 sheet of puff pastry
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 cup granulated sugar
  • 1/2 cup cornstarch
  • 4 large egg yolks
  • 2 teaspoons vanilla extract
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 2 tablespoons lemon juice
  • 2 tablespoons powdered sugar
  • Fresh mint leaves for garnish

Instructions:

  1. Preheat the oven to 400°F (200°C). Roll out the puff pastry and place it in a greased baking dish. Poke holes in the pastry with a fork to prevent it from puffing up too much.
  2. Bake the pastry for about 15-20 minutes or until golden brown. Let it cool completely.
  3. In a saucepan, combine the milk, heavy cream, and half of the granulated sugar. Heat over medium heat until just below boiling.
  4. In a separate bowl, whisk together the egg yolks, cornstarch, vanilla extract, and the remaining sugar until smooth.
  5. Gradually pour the hot milk mixture into the egg mixture, whisking constantly to temper the eggs. Return the mixture to the saucepan and cook over low heat until it thickens, about 5-7 minutes.
  6. Once thickened, pour the custard over the cooled pastry and smooth the top. Refrigerate for at least 4 hours or until set.
  7. For the berry compote, combine the mixed berries, lemon juice, and powdered sugar in a saucepan over medium heat. Cook until the berries soften and release their juices, about 5-8 minutes. Let it cool.
  8. To serve, slice the vanilla custard and top with the berry compote. Garnish with fresh mint leaves.
