Ingredients:

  • 1 can young green jackfruit in brine, drained and rinsed
  • 2 tablespoons coconut oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 2 green chilies, slit
  • 1 tablespoon garam masala
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 can coconut milk
  • 1 cup vegetable broth
  • Salt to taste
  • Fresh cilantro for garnish

Instructions:

  1. In a large pot, heat the coconut oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the minced garlic, grated ginger, and green chilies. Sauté for another 2-3 minutes until fragrant.
  3. Stir in the garam masala, turmeric, cumin, and coriander powders. Cook for 1-2 minutes to toast the spices.
  4. Add the drained jackfruit to the pot, stirring well to coat it with the spice mixture. Cook for about 5 minutes.
  5. Pour in the coconut milk and vegetable broth. Bring to a simmer, then reduce the heat and let it cook for 20-25 minutes until the jackfruit is tender and the flavors meld together.
  6. Season with salt to taste. Garnish with fresh cilantro before serving.
