Ingredients:

  • 14 oz firm tofu, pressed and cubed
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon sesame oil
  • 1 tablespoon fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 1 carrot, julienned
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • Cooked brown rice or quinoa, for serving

Instructions:

  1. In a bowl, combine the pressed tofu cubes with soy sauce, sesame oil, ginger, and garlic. Marinate for at least 15 minutes.
  2. Heat a large skillet or wok over medium-high heat. Add the marinated tofu and fry until golden brown on all sides. Remove and set aside.
  3. In the same skillet, add a splash of water (or oil) and the sliced bell pepper, broccoli, snap peas, and carrot. Stir-fry for about 5-7 minutes until the vegetables are tender-crisp.
  4. In a small bowl, mix cornstarch with water to create a slurry. Add this to the vegetables along with the tofu, and stir well to coat everything in the sauce.
  5. Cook for an additional 2-3 minutes until the sauce thickens slightly.
  6. Garnish with sliced green onions and sesame seeds. Serve hot over cooked brown rice or quinoa.
