Ingredients:

  • 1 1/4 cups all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 teaspoon salt
  • 1 large egg yolk
  • 2 tablespoons ice water
  • 8 ounces white chocolate, chopped
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries, hulled and halved
  • Mint leaves for garnish (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, powdered sugar, and salt. Add the chilled butter and mix until the mixture resembles coarse crumbs.
  3. Add the egg yolk and ice water, mixing until the dough comes together. Press the dough into a tart pan and prick the bottom with a fork.
  4. Bake the crust for 15-20 minutes or until golden brown. Allow it to cool completely.
  5. In a saucepan over medium heat, heat the heavy cream until just simmering. Remove from heat and add the chopped white chocolate and vanilla extract, stirring until smooth and melted.
  6. Pour the white chocolate ganache into the cooled tart crust, smoothing the top with a spatula.
  7. Refrigerate the tart for at least 2 hours or until set.
  8. Before serving, arrange the fresh strawberries on top of the tart and garnish with mint leaves if desired.
