Ingredients:

  • 1 whole chicken (about 4-5 pounds)
  • 2 lemons, halved
  • 4 cloves garlic, minced
  • 1/4 cup fresh rosemary, chopped
  • 1/4 cup fresh thyme, chopped
  • 1/4 cup olive oil
  • Salt and black pepper to taste
  • 1 onion, quartered

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. In a small bowl, mix the olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and pepper to create a herb paste.
  3. Pat the chicken dry with paper towels. Carefully loosen the skin over the chicken breast and thighs, and rub some of the herb paste underneath the skin. Rub the remaining paste all over the outside of the chicken.
  4. Stuff the cavity of the chicken with the halved lemons and quartered onion.
  5. Place the chicken in a roasting pan and tie the legs together with kitchen twine.
  6. Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear.
  7. Let the chicken rest for 10-15 minutes before carving. Serve with your choice of Whole30 compliant vegetables.
