Ingredients:

  • 500g wholemeal flour
  • 300ml warm water
  • 7g dry yeast
  • 2 tablespoons honey
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 50g mixed seeds (such as sunflower, pumpkin, and sesame)
  • 1 teaspoon ground cinnamon (optional)

Instructions:

  1. In a large mixing bowl, combine the warm water and honey. Sprinkle the dry yeast over the top and let it sit for about 10 minutes until frothy.
  2. Add the wholemeal flour, salt, and olive oil to the yeast mixture. If using, add ground cinnamon for an extra hint of warmth.
  3. Mix until a dough begins to form, then knead on a floured surface for about 10 minutes until smooth and elastic.
  4. Incorporate the mixed seeds into the dough, kneading them in until evenly distributed.
  5. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
  6. Preheat your oven to 220°C (428°F). Punch down the risen dough and shape it into a loaf. Place it in a greased loaf tin.
  7. Cover the loaf with the cloth again and let it rise for another 30 minutes.
  8. Bake in the preheated oven for 25-30 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.
  9. Allow the bread to cool on a wire rack before slicing. Enjoy it fresh or toasted!
