Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 orange, segmented
  • 1 grapefruit, segmented
  • 1/2 cup pomegranate seeds
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled (optional)
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions:

  1. In a medium saucepan, combine the quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and water is absorbed.
  2. In a large bowl, combine the orange segments, grapefruit segments, pomegranate seeds, red onion, and parsley.
