Ingredients:

  • 1 lb chicken breast, cut into 1-inch cubes
  • 1/2 cup coconut milk
  • 1 lime, juiced and zested
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 avocado, diced
  • 1 small red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tbsp lime juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. In a bowl, combine coconut milk, lime juice, lime zest, minced garlic, cumin, paprika, salt, and pepper to create the marinade.
  2. Add the chicken cubes to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. While the chicken marinates, prepare the avocado salsa. In a separate bowl, mix diced avocado, chopped red onion, cilantro, lime juice, salt, and pepper. Set aside.
  4. Preheat a grill or grill pan over medium-high heat. Thread the marinated chicken onto skewers, leaving a little space between each piece.
  5. Grill the chicken skewers for about 10-12 minutes, turning occasionally, until cooked through and slightly charred.
