Ingredients:

  • 2 medium zucchinis, sliced
  • 1 block of firm tofu, drained and pressed
  • 3 tablespoons tahini
  • 1/2 cup plain yogurt (or dairy-free yogurt for vegan option)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. 1. Cut the tofu into bite-sized cubes. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the tofu and cook until golden brown on all sides, about 8-10 minutes. Remove from skillet and set aside.
  2. 2. In the same skillet, add the remaining olive oil and minced garlic. Sauté for 1-2 minutes until fragrant, then add the sliced zucchini. Cook for about 5-7 minutes until tender but still slightly crisp. Season with salt and pepper.
  3. 3. In a small bowl, whisk together tahini, lemon juice, and a little water to thin it out to your desired consistency. Add salt to taste.
  4. 4. To serve, place a portion of sautéed zucchini and tofu in a bowl. Drizzle with tahini sauce and add a dollop of yogurt on top.
  5. 5. Garnish with chopped parsley and serve warm.
