Ingredients:

  • 1 lb ground turkey
  • 1 medium onion, diced
  • 2 medium zucchinis, diced
  • 2 cups leftover rice
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Fresh parsley for garnish

Instructions:

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the diced onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the ground turkey to the skillet, breaking it apart with a spoon. Cook until browned and cooked through, about 6-7 minutes.
  5. Add the diced zucchini and cook for another 5 minutes until tender.
  6. Stir in the leftover rice, Italian seasoning, salt, and pepper. Cook until everything is heated through, about 3-4 minutes.
  7. Finish with a squeeze of lemon juice and garnish with fresh parsley before serving.
