Ingredients:

  • 2 cups water
  • 1 cup dried apricots, soaked in water
  • 1 cup dates, soaked in water
  • 1 cup almond milk
  • 1 cup oat milk
  • 1 cup vanilla yogurt
  • 1 teaspoon vanilla extract

Instructions:

  1. In a bowl, soak the dried apricots and dates in 2 cups of heated water for about 30 minutes until softened.
  2. Drain the apricots and dates, reserving the soaking water for a smoother blend if desired.
  3. In a blender, combine the soaked apricots, dates, almond milk, oat milk, vanilla yogurt, and vanilla extract.
  4. Blend until smooth and creamy. If the mixture is too thick, add a little of the reserved soaking water to reach your desired consistency.
  5. Taste and adjust sweetness if necessary by adding more dates or a drizzle of maple syrup.
  6. Pour into glasses and serve chilled, garnished with a few chopped dried fruits or nuts if desired.
