Ingredients:

  • 1 can black beans, drained and rinsed
  • 12 wonton wraps
  • 2 tablespoons light soy sauce
  • 1/4 cup fresh parsley, finely chopped
  • 1 tablespoon olive oil

Instructions:

  1. Preheat the oven to 325°F (163°C).
  2. In a mixing bowl, mash the black beans slightly with a fork, leaving some chunks for texture.
  3. Add the light soy sauce and chopped parsley to the black beans and mix well.
  4. Lay out a wonton wrap on a clean surface. Place about 1 tablespoon of the black bean mixture in the center of the wrap.
  5. Moisten the edges of the wonton wrap with a little water, fold it over to create a triangle, and press the edges to seal tightly. Repeat with the remaining wraps and filling.
  6. Brush the tops of the wontons lightly with olive oil and place them on a baking sheet lined with parchment paper.
  7. Bake in the preheated oven for 18-20 minutes, or until golden brown and crisp.
  8. Remove from the oven and let cool slightly before serving.
