  • 1 cup mashed ripe bananas (about 2-3 bananas)
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup sugar
  • 1/4 cup melted coconut oil (or vegetable oil)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. In a large bowl, mix together the mashed bananas, sugar, melted coconut oil, eggs, and vanilla extract until well combined.
  3. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
  5. Fold in the shredded coconut and chocolate chips until evenly distributed.
