Ingredients:

  • 1 cup plain dairy-free yogurt
  • 1/2 cup cooked black beans, rinsed and drained
  • 1/4 cup honey or maple syrup (for vegan option)
  • 1 teaspoon ground cinnamon
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1/4 cup granola (gluten-free if necessary)
  • 2 tablespoons chopped nuts (almonds or walnuts)
  • 1 tablespoon chia seeds (optional)
  • Fresh mint leaves for garnish

Instructions:

  1. In a mixing bowl, combine the plain yogurt with honey or maple syrup and cinnamon. Stir well until fully mixed.
  2. In serving glasses or bowls, layer the yogurt mixture at the bottom.
  3. Add a layer of black beans on top of the yogurt.
  4. Next, add a layer of mixed berries over the beans.
  5. Sprinkle a layer of granola followed by chopped nuts and chia seeds if using.
  6. Repeat the layers until the glasses are filled, finishing with a layer of berries and a sprinkle of nuts on top.
  7. Garnish with fresh mint leaves before serving.
