Ingredients:

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 and 3/4 cups milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Zest of 1 orange
  • Zest of 1 lemon
  • 1/4 cup honey
  • Juice of 1 orange
  • Juice of 1 lemon

Instructions:

  1. Preheat your Belgian waffle maker according to the manufacturer's instructions.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, beat the eggs and then add the milk, melted butter, vanilla extract, and citrus zests. Mix well.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
  5. Lightly grease the waffle maker with cooking spray or brush with a little melted butter.
  6. Pour the batter into the preheated waffle maker, using enough to cover the surface but not overflow. Close the lid and cook according to the manufacturer's instructions until golden brown.
  7. While the waffles are cooking, prepare the citrus honey drizzle by combining honey, orange juice, and lemon juice in a small saucepan. Heat over low heat until warmed through and slightly thickened.
  8. Serve the waffles warm, drizzled with the citrus honey sauce.
