Ingredients:

  • 1 cup mixed fresh berries (cherries, raspberries, and blueberries)
  • 1 slice of crusty white bread
  • 1 tablespoon cocoa powder
  • 1 tablespoon sugar (or to taste)
  • 1 tablespoon lemon juice
  • Mint leaves for garnish

Instructions:

  1. In a bowl, combine the mixed berries, sugar, and lemon juice. Gently toss to coat the berries and let them macerate for about 15 minutes.
  2. While the berries are macerating, trim the crusts off the slice of bread and cut it into rounds to fit your serving dish.
  3. Layer the berry mixture in the bottom of a small bowl or glass, then add a layer of bread on top.
  4. Sprinkle cocoa powder over the bread, then add another layer of berries followed by more bread until all the ingredients are used, finishing with a layer of berries on top.
  5. Cover the pudding with plastic wrap and place a weight on top (like a small plate) to help compress the layers. Refrigerate for at least 2 hours or overnight.
  6. To serve, gently unmold the pudding onto a plate, garnish with fresh mint leaves, and enjoy!
