Ingredients:

  • 4 slices of whole grain bread
  • 4 slices of crispy bacon
  • 1 ripe tomato, sliced
  • 2 leaves of crisp lettuce (such as romaine or butter)
  • 2 tablespoons mayonnaise
  • 1 teaspoon fresh dill, chopped
  • 1 teaspoon fresh chives, chopped
  • 2 cups potatoes, diced
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • 1 cup strawberries, washed and hulled
  • 1 cup dark chocolate chips
  • 1 teaspoon coconut oil (optional)

Instructions:

  1. Prepare the herb mayonnaise by mixing the mayonnaise, dill, and chives in a small bowl. Set aside.
  2. Cook the bacon in a skillet over medium heat until crispy, then drain on paper towels.
  3. In the same skillet, toast the slices of whole grain bread until golden brown.
  4. Assemble the BLT by spreading the herb mayonnaise on one side of each slice of toasted bread. Layer with bacon, tomato slices, and lettuce. Top with the other slice of bread.
  5. For the potato salad, boil the diced potatoes in salted water until tender, about 10-15 minutes. Drain and let cool.
  6. In a large bowl, combine the cooled potatoes, apple cider vinegar, Dijon mustard, salt, and pepper. Mix gently to combine.
  7. Melt the dark chocolate and coconut oil in a microwave-safe bowl in 30-second intervals, stirring until smooth. Dip each strawberry into the chocolate, allowing excess to drip off, and place on a parchment-lined baking sheet to set.
  8. Serve the BLT sandwich with a side of herb potato salad and chocolate-covered strawberries for dessert.
