Ingredients:

  • 1 lb fresh squid, cleaned and sliced
  • 1 lemon, juiced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon fresh parsley, chopped
  • 2 cups vanilla ice cream
  • 1 cup cornflakes, crushed
  • 1 egg, beaten
  • Oil for frying

Instructions:

  1. In a large pot, bring water to a boil. Add lemon juice, garlic, salt, and black pepper.
  2. Add the cleaned squid to the boiling water and cook for about 2-3 minutes until tender. Drain and set aside.
  3. In a bowl, mix the boiled squid with olive oil and chopped parsley. Set aside to cool.
  4. Scoop the vanilla ice cream into balls and freeze for at least 1 hour.
  5. Once the ice cream is frozen, dip each ball in beaten egg, then roll in crushed cornflakes, ensuring they are well coated.
  6. Heat oil in a deep pan over medium heat. Fry the coated ice cream balls for about 10-15 seconds until golden brown. Remove and drain on paper towels.
