Ingredients:

  • 1 pound shrimp, peeled and deveined
  • 1 pound Cajun sausage, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup corn kernels (fresh or frozen)
  • 2 tablespoons olive oil
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat your grill to medium-high heat.
  2. In a large bowl, combine the shrimp, sausage, bell peppers, corn, olive oil, Cajun seasoning, garlic powder, salt, and pepper. Toss until everything is evenly coated.
  3. Cut large pieces of aluminum foil (about 12x18 inches) and place a portion of the mixture in the center of each piece.
  4. Fold the foil over to create a sealed packet, making sure it's tightly closed to prevent leaks.
  5. Place the foil packs on the grill and cook for 15-20 minutes, or until the shrimp are pink and cooked through.
  6. Carefully open the packs (steam will escape) and garnish with fresh parsley before serving.
