Ingredients:

  • 2 cups grated cassava (fresh and unfermented)
  • 1 cup ripe plantains, mashed
  • 1 cup cocoyams, peeled and grated
  • 1/2 cup coconut milk
  • 1/4 cup maple syrup (or sweetener of choice)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon cinnamon
  • Pinch of salt

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, combine the grated cassava, mashed plantains, and grated cocoyams. Mix well until combined.
  3. Add the coconut milk, maple syrup, vanilla extract, nutmeg, cinnamon, and salt to the mixture. Stir until smooth and well incorporated.
  4. Pour the mixture into the prepared baking dish, spreading it evenly.
