Ingredients:

  • 100g shrimp, peeled and deveined
  • 100g scallops, cleaned
  • 50g white fish fillet, diced
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 150ml milk
  • 50g cheddar cheese, grated
  • 30g parmesan cheese, grated
  • 1 tablespoon breadcrumbs
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste
  • A squeeze of lemon juice

Instructions:

  1. Preheat your oven to 200°C (400°F).
  2. In a saucepan, melt the butter over medium heat. Add the flour and whisk for about 1 minute until it forms a roux.
  3. Gradually add the milk while whisking continuously until the mixture thickens and is smooth.
  4. Stir in the cheddar cheese until melted and combined. Season with salt, pepper, and a squeeze of lemon juice.
  5. In a baking dish, combine the shrimp, scallops, and white fish. Pour the cheese sauce over the seafood and mix gently to coat.
  6. Sprinkle the parmesan cheese and breadcrumbs evenly on top.
  7. Bake in the preheated oven for 15-20 minutes, or until the top is golden and bubbling.
  8. Remove from the oven and garnish with fresh parsley before serving.
