Ingredients:

  • 1 cup canned chickpeas, drained and rinsed
  • 1/2 cup peanut butter
  • 1/4 cup tahini
  • 1/4 cup sugar
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1/4 cup chocolate chips (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a food processor, combine the chickpeas, peanut butter, tahini, sugar, baking powder, cinnamon, and vanilla extract. Blend until smooth and creamy.
  3. If desired, fold in chocolate chips for extra sweetness.
  4. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
