Ingredients:

  • 2 lobster tails
  • 1/2 cup unsalted butter, softened
  • 1/4 cup fresh cilantro, finely chopped
  • 2 tablespoons lime juice
  • 1 teaspoon lime zest
  • 1 garlic clove, minced
  • Salt and pepper to taste
  • Lime wedges for serving

Instructions:

  1. Preheat your grill or oven broiler to medium-high heat.
  2. In a bowl, combine the softened butter, chopped cilantro, lime juice, lime zest, minced garlic, salt, and pepper. Mix until well blended.
  3. Using kitchen scissors, carefully cut the top shell of each lobster tail down the center, being careful not to cut the meat.
  4. Gently pull the lobster meat out of the shell, keeping it attached at the base, and lay it on top of the shell.
  5. Generously spread the cilantro-lime butter mixture over the exposed lobster meat.
  6. Place the lobster tails on the grill or under the broiler. Cook for about 8-10 minutes, or until the lobster meat is opaque and cooked through.
  7. Remove from heat and let rest for a few minutes. Serve with lime wedges and additional cilantro if desired.
