Ingredients:

  • 1 cup unsweetened coconut flakes
  • 1 cup almond butter
  • 1 cup pitted dates
  • 1/2 cup rolled oats
  • 1/4 cup chia seeds
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt

Instructions:

  1. In a food processor, combine the pitted dates and almond butter. Blend until smooth.
  2. Add the rolled oats, chia seeds, vanilla extract, sea salt, and half of the coconut flakes to the mixture. Pulse until well combined.
  3. Using your hands, form the mixture into small balls, about 1 inch in diameter.
  4. Roll each ball in the remaining coconut flakes to coat them evenly.
  5. Place the energy bites on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
