Ingredients:

  • 2 tablespoons olive oil
  • 1 large leek, sliced
  • 3 cloves garlic, minced
  • 3 carrots, diced
  • 2 sweet potatoes, peeled and diced
  • 2 parsnips, peeled and diced
  • 4 cups vegetable broth
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh rosemary, chopped
  • Salt and pepper to taste
  • 1/2 cup heavy cream or cashew puree
  • Fresh parsley for garnish

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the sliced leek and minced garlic, and sauté until softened, about 5 minutes.
  2. Add the diced carrots, sweet potatoes, and parsnips to the pot. Stir well to combine.
  3. Pour in the vegetable broth and bring to a boil. Reduce the heat to low and add the thyme and rosemary.
  4. Simmer the stew for about 25-30 minutes, or until the vegetables are tender.
  5. Season with salt and pepper to taste. For a creamier texture, stir in the heavy cream or cashew puree just before serving.
  6. Serve hot, garnished with fresh parsley.
