Ingredients:

  • 2 cups cracked or fiber oat cereal
  • 1/2 cup grape juice
  • 1/4 cup alfalfa powder
  • 1/4 cup oat milk
  • 2 tablespoons lard
  • 1 teaspoon apple pectin
  • 1/2 teaspoon guar gum
  • 1/4 teaspoon salt
  • cinnamon or nutmeg for sprinkling

Instructions:

  1. In a large mixing bowl, combine the cracked oat cereal, alfalfa powder, apple pectin, guar gum, and salt.
  2. In a separate bowl, mix together the grape juice, oat milk, and lard until well combined.
  3. Pour the wet mixture into the dry ingredients and stir until fully combined.
  4. Line a microwave-safe dish with parchment paper and press the mixture evenly into the dish.
  5. Microwave on high for 3-4 minutes, checking for doneness. The mixture should be slightly firm to the touch.
  6. Remove from the microwave and allow to cool slightly.
  7. Spray the top lightly with more grape juice and sprinkle with cinnamon or nutmeg.
  8. Let the bars cool completely before cutting into squares.
