Ingredients:

  • 4 chicken breasts
  • 1 can (14.5 oz) diced tomatoes
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 2 stalks celery, diced
  • 1 tablespoon olive oil
  • 1 teaspoon Creole seasoning
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 tablespoons butter

Instructions:

  1. Set the Instant Pot to 'Sauté' mode. Add olive oil and sauté the diced onion, garlic, and celery until softened, about 3-4 minutes.
  2. Season the chicken breasts with salt, pepper, and Creole seasoning, then add them to the Instant Pot, browning for about 2 minutes on each side.
  3. Pour in the canned tomatoes and chicken broth. Sprinkle paprika over the top.
  4. Seal the Instant Pot lid and cook on 'Manual' high pressure for 10 minutes. Allow for a natural release for 5 minutes, then quick release the remaining pressure.
  5. While the chicken is cooking, boil the potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and return to the pot.
  6. Add milk and butter to the potatoes, then mash until creamy and smooth. Season with salt and pepper to taste.
  7. Serve the Creole chicken over a bed of mashed potatoes, spooning the flavorful sauce over the top.
