Ingredients:

  • 1 block firm tofu, pressed and cubed
  • 1 cup broccoli florets
  • 1 cup frozen peas
  • 1 can apricots, drained and chopped
  • 1/2 cup roasted peanuts, roughly chopped
  • 1 tablespoon curry powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried chili flakes (adjust to taste)
  • 2 tablespoons vegetable oil
  • Salt to taste
  • Cooked rice or quinoa for serving

Instructions:

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the cubed tofu and sauté until golden brown on all sides, about 5-7 minutes.
  3. Stir in the broccoli florets and frozen peas, cooking for another 3-4 minutes until the vegetables are tender yet crisp.
  4. Sprinkle in the curry powder, garlic powder, and dried chili flakes, stirring well to coat the tofu and vegetables.
  5. Add the chopped apricots and roasted peanuts to the skillet, mixing everything together. Cook for an additional 2 minutes to heat through.
