Ingredients:

  • 1 cup dulce de leche
  • 1 cup heavy cream
  • 4 oz bittersweet chocolate, chopped
  • 1 cup pastry flour
  • 1/4 cup granulated pure cane sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 cup egg yolks
  • 1/4 cup corn starch
  • 1/2 cup white chocolate chips
  • 1 tsp vanilla extract
  • 1/4 tsp baking soda
  • Pinch of salt

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the egg yolks and vanilla extract, mixing until fully incorporated.
  4. Sift together the pastry flour, corn starch, baking soda, and salt. Gradually add this mixture to the wet ingredients, combining until a dough forms.
  5. Press the dough into a tart pan evenly across the bottom and up the sides. Prick the bottom with a fork to prevent bubbling.
  6. Bake for 15-20 minutes or until lightly golden. Remove from oven and let cool.
  7. In a saucepan, heat the heavy cream until just steaming, then pour it over the chopped bittersweet chocolate in a bowl. Let it sit for 2-3 minutes, then stir until smooth.
  8. Spread the dulce de leche evenly over the cooled tart crust, then pour the chocolate ganache on top, smoothing it out.
  9. Sprinkle white chocolate chips over the top and let it set in the fridge for at least 2 hours.
  10. Before serving, whip additional heavy cream until soft peaks form and dollop on top for added creaminess.
