Ingredients:

  • 4 large eggs
  • 1 cup bean sprouts
  • 1/2 cup chopped green onions
  • 1/2 cup diced bell pepper (red or yellow)
  • 1/2 cup shredded carrots
  • 1/4 cup cooked and diced mushrooms
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon cornstarch
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil for frying

Instructions:

  1. In a large bowl, whisk the eggs until well beaten. Stir in the soy sauce, sesame oil, and cornstarch until smooth.
  2. Add the bean sprouts, green onions, bell pepper, carrots, and mushrooms to the egg mixture. Season with salt and pepper.
  3. Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat. Pour half of the egg mixture into the skillet, spreading it evenly.
  4. Cook for about 3-4 minutes until the edges start to set, then carefully flip the omelet and cook for another 2-3 minutes until fully cooked. Remove from the skillet and keep warm.
  5. Repeat with the remaining egg mixture, adding more oil if necessary.
  6. Serve the Egg Fu Yung warm, drizzled with additional soy sauce or your favorite dipping sauce.
