Ingredients:

  • 200g udon noodles
  • 200g firm tofu, cubed
  • 4 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 2 green onions, sliced
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • Sesame seeds for garnish

Instructions:

  1. Cook the udon noodles according to package instructions. Drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the cubed tofu and cook until golden brown on all sides. Remove the tofu from the skillet and set aside.
  3. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
  4. Add the bell pepper and broccoli to the skillet, and stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  5. Return the cooked tofu to the skillet, then add the cooked udon noodles, soy sauce, sesame oil, and green onions. Toss everything together and cook for an additional 2-3 minutes, allowing the flavors to meld.
  6. Season with salt and pepper to taste. Serve hot, garnished with sesame seeds.
