Ingredients:

  • 1 lb chicken thighs, boneless and skinless, cut into bite-sized pieces
  • 1/2 cup cornstarch
  • 1/4 cup vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1/2 cup soy sauce
  • 1/4 cup rice vinegar
  • 1/4 cup brown sugar
  • 1 tablespoon sesame oil
  • 1 teaspoon red pepper flakes
  • 1 tablespoon orange zest
  • 1 tablespoon sesame seeds, for garnish
  • 2 cups broccoli florets, steamed
  • Cooked rice, for serving

Instructions:

  1. In a bowl, coat the chicken pieces with cornstarch and set aside.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the coated chicken to the skillet, cooking until golden brown and crispy, about 5-7 minutes. Remove from the skillet and set aside.
  4. In the same skillet, add garlic and ginger, sautéing for about 30 seconds until fragrant.
  5. In a bowl, whisk together soy sauce, rice vinegar, brown sugar, sesame oil, red pepper flakes, and orange zest.
  6. Pour the sauce into the skillet and bring to a simmer.
  7. Add the cooked chicken back into the skillet, tossing to coat in the sauce. Cook for an additional 2-3 minutes until heated through.
  8. Serve the chicken over cooked rice, garnished with steamed broccoli and sesame seeds.
