Ingredients:

  • 2 cups Greek yogurt (plain or vanilla)
  • 1/2 cup honey
  • 1 cup mixed fresh berries (strawberries, blueberries, raspberries)
  • 1/2 cup pistachios, shelled and chopped
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Granola for topping (optional)

Instructions:

  1. In a small bowl, mix the chopped pistachios with 2 tablespoons of honey and a pinch of cinnamon. Set aside to let the flavors meld.
  2. In another bowl, combine the Greek yogurt with the vanilla extract and remaining honey. Stir well until smooth.
  3. In serving glasses or bowls, layer the yogurt mixture at the bottom, followed by a layer of fresh berries and a sprinkle of honeyed pistachios.
  4. Repeat the layers until the glasses are filled, finishing with a layer of berries and a few extra pistachios on top.
  5. If desired, add a sprinkle of granola for extra crunch.
  6. Serve immediately or refrigerate for up to 30 minutes before serving.
