Ingredients:

  • 8 fresh sea urchins, halved
  • 2 tablespoons olive oil
  • 1 tablespoon smoked paprika
  • 1 tablespoon brown sugar
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup diced mango
  • 1 cup diced avocado
  • 1/2 cup diced red onion
  • 1/4 cup chopped cilantro
  • Juice of 2 limes
  • Zest of 1 lime

Instructions:

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, mix together olive oil, smoked paprika, brown sugar, garlic powder, salt, and pepper to create a BBQ glaze.
  3. Brush the cut side of the sea urchin halves with the BBQ glaze.
  4. Place the sea urchin halves on the grill, cut side down. Grill for about 2-3 minutes until slightly charred.
  5. While the sea urchins are grilling, prepare the citrus salsa by combining diced mango, avocado, red onion, cilantro, lime juice, and lime zest in a bowl. Season with salt to taste.
  6. Remove the sea urchins from the grill and top each half with a generous spoonful of the citrus salsa.
  7. Serve immediately, garnished with additional cilantro if desired.
