Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup cooked rice
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 2 cups diced watermelon
  • 1/4 cup red onion, finely chopped
  • 1 lime, juiced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
