Ingredients:

  • 1 cup whole wheat flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup coconut oil, melted
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup almond milk (or any non-dairy milk)
  • 1/2 cup dark chocolate chips
  • 1/4 cup chopped walnuts (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the whole wheat flour, cocoa powder, baking soda, and salt.
  3. In another bowl, combine the melted coconut oil, maple syrup, vanilla extract, and almond milk. Mix well.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Fold in the dark chocolate chips and walnuts if using.
  6. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are set. The centers may look slightly underbaked but will firm up as they cool.
  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
