Ingredients:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder

  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • 2 cups fresh strawberries, sliced
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract for whipped cream

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Mix well.
  3. Add the softened butter, milk, eggs, vanilla extract, and lemon zest to the dry ingredients. Beat on medium speed for 2 minutes until smooth.
  4. Divide the batter evenly between the prepared cake pans and smooth the tops.
  5. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.
  6. While the cakes are cooling, prepare the whipped cream. In a medium bowl, beat the heavy whipping cream with powdered sugar and vanilla extract until soft peaks form.
  7. Once the cakes are completely cool, place one cake layer on a serving plate. Spread a layer of whipped cream over the top and add a layer of sliced strawberries.
  8. Top with the second cake layer and cover the entire cake with the remaining whipped cream. Decorate with additional strawberries on top.
  9. For a fun touch, use a cookie cutter to create Hello Kitty shapes from the remaining cake scraps or strawberries and place them on the cake.
