Ingredients:

  • 2 lbs beef tenderloin
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • Salt and pepper to taste
  • 2 lbs Yukon Gold potatoes, peeled and cubed
  • 1/2 cup heavy cream
  • 1/4 cup unsalted butter
  • 1/2 teaspoon garlic powder
  • Fresh parsley for garnish

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Rub the beef tenderloin with olive oil, minced garlic, rosemary, thyme, salt, and pepper. Let it marinate for 30 minutes.
  3. Place the beef in a roasting pan and roast for 25-30 minutes or until it reaches your desired doneness.
  4. While the beef is roasting, boil the cubed potatoes in a large pot of salted water until tender, about 15-20 minutes.
  5. Drain the potatoes and return them to the pot. Add the heavy cream, butter, garlic powder, salt, and pepper. Mash until creamy and smooth.
  6. Remove the beef from the oven and let it rest for 10 minutes before slicing.
  7. Serve the sliced beef tenderloin with a generous scoop of garlic mashed potatoes, garnished with fresh parsley.
