Ingredients:

  • 2 ribeye steaks (about 1 inch thick)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • 4 medium potatoes, peeled and cut into chunks
  • 1/2 cup heavy cream
  • 4 tablespoons butter
  • 1 bunch asparagus, trimmed
  • 1 tablespoon lemon juice
  • Parmesan cheese for garnish (optional)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix together olive oil, minced garlic, rosemary, thyme, salt, and pepper. Rub this mixture over both sides of the ribeye steaks.
  3. Heat a cast-iron skillet over medium-high heat. When hot, add the ribeye steaks and sear for about 3-4 minutes on each side for medium-rare, or until desired doneness. Remove from skillet and let rest.
  4. In a pot, boil the potatoes in salted water until fork-tender, about 15-20 minutes. Drain and return to the pot.
  5. Add heavy cream, butter, and a pinch of salt to the potatoes. Mash until creamy and smooth. Stir in minced garlic for added flavor.
  6. On a baking sheet, toss the asparagus with olive oil, lemon juice, salt, and pepper. Roast in the oven for about 15 minutes until tender and slightly crispy.
  7. Serve the ribeye steaks with a generous scoop of garlic mashed potatoes and a side of roasted asparagus. Garnish with Parmesan cheese if desired.
