Ingredients:

  • 2 boneless, skinless chicken breasts
  • 4 medium-sized potatoes, diced
  • 2 cups cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the diced potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them out on a baking sheet.
  3. Roast the potatoes in the oven for 25-30 minutes or until golden and crispy, stirring halfway through.
  4. While the potatoes are roasting, season the chicken breasts with salt, pepper, oregano, and thyme.
  5. In a skillet, heat the remaining olive oil over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side, until cooked through and golden brown.
  6. In the last few minutes of cooking the chicken, add the minced garlic to the pan and sauté until fragrant.
  7. Add the cherry tomatoes to the skillet and cook until they start to burst and release their juices, about 5 minutes.
  8. Serve the chicken breasts topped with the tomato mixture and a side of roasted potatoes. Garnish with fresh basil.
