Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 cups jasmine rice
  • 4 cups chicken broth
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. In a bowl, mix olive oil, lemon juice, lemon zest, oregano, thyme, salt, and pepper to create a marinade.
  2. Add the chicken breasts to the marinade and let them sit for at least 30 minutes.
  3. In a pot, heat a tablespoon of olive oil over medium heat. Add minced garlic and sauté until fragrant.
  4. Add jasmine rice and stir for 1-2 minutes, then pour in the chicken broth. Bring to a boil, then reduce heat to low and cover. Cook for about 15 minutes or until the rice is tender.
  5. Meanwhile, heat a grill or grill pan over medium-high heat. Grill the marinated chicken for 6-7 minutes on each side or until fully cooked.
  6. Once the rice is done, fluff it with a fork and season with salt and pepper if needed.
  7. Serve the grilled chicken over the garlic rice, garnished with fresh parsley.
