Ingredients:

  • 2 chicken breasts
  • 1 cup brown rice
  • 2 cups beef broth
  • 2 cups broccoli florets
  • 3 tablespoons olive oil
  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon chipotle spice
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions:

  1. In a bowl, whisk together honey, Dijon mustard, apple cider vinegar, Worcestershire sauce, chipotle spice, and paprika. Season with salt and pepper.
  2. Add chicken breasts to the marinade, ensuring they are well coated. Let marinate for at least 15 minutes.
  3. In a small pot, bring beef broth to a boil. Add brown rice, reduce heat to low, cover, and simmer for about 40-45 minutes or until rice is tender and liquid is absorbed.
  4. In a large stove pan, heat 1 tablespoon of olive oil over medium heat. Once hot, add the marinated chicken breasts and cook for 6-7 minutes on each side, or until cooked through and golden brown.
  5. Remove the chicken from the pan and let it rest for a few minutes before slicing.
  6. In the same pan, add another tablespoon of olive oil and sauté the broccoli for 3-4 minutes until tender yet crisp. Season with salt and pepper.
  7. To serve, plate the sliced chicken alongside the spiced brown rice and sautéed broccoli.
