Ingredients:

  • 4 cups vegetable broth
  • 1 cup shiitake mushrooms, sliced
  • 1 cup firm tofu, cubed
  • 1 cup carrots, julienned
  • 1 cup bell pepper, thinly sliced
  • 1 cup snow peas, trimmed
  • 3 green onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon chili paste (adjust to taste)
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • Juice of 1 lime
  • Fresh cilantro for garnish

Instructions:

  1. In a large pot, heat sesame oil over medium heat. Add garlic and ginger, sautéing until fragrant.
  2. Add sliced shiitake mushrooms, carrots, and bell pepper. Stir-fry for about 5 minutes until the vegetables begin to soften.
  3. Pour in the vegetable broth and bring to a gentle boil.
  4. Add the cubed tofu and snow peas. Simmer for 5-7 minutes until the snow peas are tender-crisp.
  5. Stir in soy sauce, chili paste, and lime juice. Adjust the seasoning to taste.
  6. To thicken the soup, stir in the cornstarch mixture and cook for an additional 2-3 minutes until the soup thickens slightly.
  7. Remove from heat and garnish with chopped green onions and fresh cilantro before serving.
