Ingredients:

  • 4 cups vegetable broth
  • 1 cup sliced shiitake mushrooms
  • 1 cup cubed firm tofu
  • 1 cup sliced bell peppers (red and green)
  • 1 cup shredded carrots
  • 1/2 cup sliced green onions
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 1 tablespoon lime juice
  • 1 teaspoon black pepper
  • 1 teaspoon white pepper
  • 1/2 teaspoon chili flakes (adjust to taste)
  • Fresh cilantro for garnish

Instructions:

  1. In a large pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant.
  2. Add the sliced shiitake mushrooms, bell peppers, and shredded carrots. Cook for about 5 minutes until the vegetables begin to soften.
  3. Pour in the vegetable broth and bring to a simmer. Stir in the soy sauce, black pepper, white pepper, and chili flakes.
  4. Add the cubed tofu and let the soup simmer for another 5-7 minutes to allow the flavors to meld.
  5. Mix the cornstarch with water to create a slurry, then stir it into the soup to thicken slightly.
  6. Remove the pot from heat and stir in the lime juice. Taste and adjust seasoning if needed.
  7. Serve hot, garnished with sliced green onions and fresh cilantro.
