Ingredients:

  • 1 pound large shrimp, peeled and deveined
  • 1/4 cup key lime balsamic vinegar
  • 2 ripe avocados, halved and pitted
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon honey
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions:

  1. In a bowl, combine the key lime balsamic vinegar, olive oil, minced garlic, honey, salt, and pepper. Add the shrimp and marinate for 15-20 minutes.
  2. Heat a grill or skillet over medium-high heat. Cook the marinated shrimp for 2-3 minutes on each side until they are pink and opaque.
  3. While the shrimp cooks, slice the avocados and arrange them on a serving platter.
  4. Once cooked, place the shrimp on top of the avocado slices.
