Ingredients:

  • 1 cup almond flour
  • 1/2 cup rolled oats
  • 1/2 cup vanilla protein powder
  • 1/4 cup coconut sugar
  • 1/4 cup maple syrup
  • 1/4 cup unsweetened applesauce
  • Zest of 1 lemon
  • 2 tablespoons lemon juice
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup dried cherries, chopped
  • 1/4 cup chopped walnuts (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine almond flour, rolled oats, protein powder, coconut sugar, baking soda, and salt.
  3. In a separate bowl, mix together maple syrup, applesauce, lemon zest, and lemon juice until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the chopped dried cherries and walnuts if using.
  6. Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 12-15 minutes or until the edges are lightly golden.
  8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
