Ingredients:

  • 4 chicken thighs, boneless and skinless
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups fresh spinach
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a bowl, combine olive oil, lemon juice, lemon zest, garlic, oregano, thyme, salt, and pepper. Add chicken thighs and marinate for at least 30 minutes.
  2. While the chicken is marinating, rinse the jasmine rice under cold water until the water runs clear. In a saucepan, bring chicken broth to a boil, add the rice, cover, and reduce heat to low. Cook for 15 minutes or until rice is tender.
  3. In a large skillet, heat a little olive oil over medium heat. Add the marinated chicken thighs and cook for about 6-7 minutes on each side, or until fully cooked and golden brown.
  4. Remove the chicken from the skillet and let it rest. In the same skillet, add the fresh spinach and sauté until wilted.
  5. To serve, fluff the rice with a fork and place it on plates. Top with the grilled chicken thighs, sautéed spinach, and garnish with fresh parsley.
