Ingredients:

  • 4 lobster tails
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • Lemon wedges, for serving

Instructions:

  1. Preheat your grill to medium-high heat.
  2. In a bowl, whisk together olive oil, lemon juice, minced garlic, parsley, thyme, paprika, salt, and pepper.
  3. Using kitchen shears, cut the top shell of the lobster tails lengthwise, being careful not to cut through the meat.
  4. Gently pull the meat out and lay it on top of the shell. This is called 'piggybacking' the lobster.
  5. Brush the lobster meat with the herb marinade generously.
  6. Place the lobster tails on the grill with the meat side up. Grill for about 5-7 minutes, or until the meat is opaque and firm. Baste with remaining marinade halfway through cooking.
  7. Remove from the grill and serve with lemon wedges.
