Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground ginger
  • 1/2 cup unsalted butter, melted
  • 1/2 cup honey
  • 2 large eggs
  • 1/2 cup buttermilk
  • Zest of 1 lemon
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin tin or line it with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and ground ginger until well combined.
  3. In another bowl, mix the melted butter, honey, eggs, buttermilk, lemon zest, lemon juice, and vanilla extract until smooth.
